Welcome to another what I ate Wednesday post! Every Wednesday I try my best to post about what I ate as a busy vegan, to show others that eating a plant based diet is not only easy, but also delicious and nutritious!

How do vegans even build muscle?

That’s a question that is always coming up when I tell people that I am vegan. Where do you get your protein? How are you not deficient in iron or calcium? It honestly gets pretty exhausting. But when people ask me these things, I take it as an opportunity to share how awesome a vegan diet is instead of putting down their diet choices.

Guess what! There is a new article proving that plant protein is actually better than animal protein for your body and for building muscles! What is comes down to is the quality. When comparing the two, they can both build muscle the same, but it’s all the other “fluff” if you will that comes along with each type of protein.

Upon Waking/Pre-Workout: ACV Shot & Coconut Lemon Water

I’ve been really loving the energy I get from this ACV shot! Last week I shared that I’ve been adding about 12 oz of ACV with 2 packets of the Vitamin D Emergen-C, and that will last me about 2 weeks. I think the extra vitamins in the shot gives it a little extra kick. After that I drink a full glass of water, which is about 20 oz, to wash down the ACV flavor.

Over the weekend there was a sale at Target on Naked Coconut Water, so naturally I bought 2 containers (here’s the Amazon link). Since it’s so hydrating, I thought it would be an awesome thing to drink during my workout! I used 8 oz of coconut water mixed with about 12 oz of water and the juice of 1/2 a lemon = Coconut Lemon Water. This has been getting me through my workout beautifly this week!

I finally got the 45 serving tub of Vega Sport Protein! It’s literally filled to the top, and I love that the packaging is made from 100% recycled material 🙂 Good job Vega!! Even though this stuff is awesome just mixed with some cold water, today I have a busy morning and wanted a little something extra to hold me over until lunch.

For this Chocolate Banana Protein Shake, I just blended all these ingredients until smooth!

Lunch: Simple Salad w/ Homemade Beet Dressing

Fresh salads are always something I love including at least a few times per week for lunch! Today I used 3-4 cups of mixed greens with 1/2 chopped apple, some cooked sweet potato, some chopped cucumber, and pumpkin seeds. The dressing is a mixture of Simply Balanced Balsamic Dressing (found at Target) and beet purée. It’s so yummy!!

I was fortunate enough to meet up with a new friend from instagram! I can’t believe how supportive the vegan community is here in Minneapolis. If you are looking for fun new places to try to eat hit me up! I love meeting new people and eating all the vegan foods!! 🙂

Today we went to Truce (a juice and smoothie bar based in Minneapolis) for some juice and energy shots! The nanny kiddos loved the snack bars there too 🙂

Today I was spending some extra time working on this little blog, so Tony, the hubby, whipped these babies up for us that were simply out of this world!

I love how supportive he had been through this whole diet transition the past few months and always eats vegan with me at home! He still allows for some cheese when we are out or at a friends house, which is such an awesome first step! Like I mention in this post, people need to make the choice on their own terms 🙂
