BLT Summer Rolls made with Vegan Tempeh Bacon

Summer is officially here! BLT Summer Rolls are the perfect fresh summer meal or snack and very easy to make! This was my first time actually using rice paper in my kitchen, but I LOVE ordering them out/at Trader Joe’s! I was surprised at how easy they were to work with!

Rice Paper to Summer Rolls

Working with rice paper is surprisingly easy! All you do is get them wet (with room temp. water – I found it was best to use a low bowl or rimmed plate for this), add your ingredients and roll! You can add all the veggies you desire! I’ve even seen some made with rice and quinoa similar to sushi rolls.

Here are the ingredients I used for the BLT recipe, or should I say TLTs!!

Ingredients

Lightlife Fakin’ Bacon is the BEST EVER flavor!! If you loved bacon in your previous life, then you will die when you taste this! I found this at Whole Foods, but you can also order these in bulk from Amazon if you have freezer space or are planning a brunch party! They come in a 12 pack with about 8-9 strips in each package.

Spring Roll Skin was found at Lund’s & Byerly’s. I think this stuff is pretty standard and can be found at any health food store or at an Asian food market. Here’s where you can find them on Amazon for cheap and if you don’t live close to any of these stores!

Fresh romaine, tomatoes, & avocado! I used the avocado as a dipping sauce, but you can also add it right into the rolls! This part it totally optional, but I love adding whole sesame seeds to the spring rolls to give it a little more texture and they also just look bomb af!

How to Roll

Start by wetting the rice paper and place it on your work space. Then add a whole leaf of romaine followed by the tempeh bacon strips and tomato strips. Add avocado now if desired. Then fold the rice paper over the ingredients and fold in the sides. Roll gently but make sure it’s tight so nothing falls out later. Slice in half and place on your serving dish!

Chunky Avo Dipping Sauce

Use one whole avocado, some fresh lime juice, organic tahini (Trader Joe’s), and organic cayenne pepper. Use what ever ratios you like! Start by mashing the avocado, then add the tahini and cayenne and mix well. Thin the sauce out just slightly be adding a dash of water. Continue to add ingredients and stir until you are happy with the texture and flavor!

BLT Summer Rolls made with Tempeh Bacon

  • Yield: 4 rolls
  • Prep Time: 10 minutes

Ingredients

  • 4 Rice Paper Rolls (spring rolls)
  • 1 package Lightlife Tempeh, Fakin' Bacon Flavor
  • 4 Romaine Leaves
  • 1 Roma Tomato, sliced into strips
  • 1 Avocado, sliced into strips (optional)
  • 1 Avocado, mashed
  • 1 Tbsp Organic Tahini
  • 1 Tbsp Fresh Lime Juice
  • 1-2 Tbsps Water
  • Whole Sesame Seeds (optional)

Instructions

  1. Make sure to have all your ingredients ready: romaine washed, tomatoes washed and sliced, the tempeh bacon cooked to a crisp, and your work space ready!

  2. Start by wetting the rice paper and place it on your work space. Then add a whole leaf of romaine followed by the tempeh bacon strips and tomato strips. Add avocado now if desired.

  3. Then fold the rice paper over the ingredients and fold in the sides. Roll gently but make sure it's tight so nothing falls out later. Slice in half and place on your serving dish.

  4. Repeat steps 2 & 3 for the rest of the rolls.

  5. For the Chuky Avo Dipping Sauce: Mash one whole avocado then add the tahini and cayenne and mix well. Thin the sauce out just slightly be adding a dash of water. Use what ever ratios you like!

  6. Serve the summer rolls and the dipping sauce together, top with whole sesame seeds and enjoy!
