Double Berry Pinwheels with Vegan Cashew Cream Cheese

These double berry pinwheels are so easy to make and are s perfect for summer! I can’t wait to take these bad boys up to the lake/cabin for the 4th weekend and share with them my family 🙂

Here’s a few shopping tips for your to make sure you are getting the best out of your meal:

  • Strawberries are on the ‘dirty dozen’ list of foods, so make sure to buy organic
  • Use organic and non GMO tortillas if possible – Try this brand
  • Find raw cashews in the bulk section of the grocery store or save some $$ and order from Amazon right HERE

Assembling the Double Berry Pinwheels

  1. Start by thinly slicing the strawberries and chopping the blueberries in halves or quarters
  2. Spread an even layer of the cream cheese on the tortillas (use however many our heart desires – one serving is one whole tortilla roll)
  3. Then add an even layer of strawberries and blueberries on 1/2 of the cream cheese leaving the other 1/2 exposed
  4. Carefully roll the tortilla starting at the end with the berries and use the cream cheese like glue to help it stay together – add more cream cheese if needed
  5. Carefully slice the roll into 1/2 inch ‘pinwheels’ and serve with fresh fruit!
