When cooking you own lentils, sometimes they get mushy to tacky and just don’t turn out well. Ladies and Gents, today you will learn the secret to cooking lentils!

Lentil Taco Bowls
Along with the secret to cooking lentils, you will learn my FAV recipe to use them with! Taco Lentil Bowls! These are so yummy and colorful and will fill your tummy up with tons of nourishment.
The key to a great taco bowl is loading it up with all the colors! Get those greens in their with some spinach or romaine, green onions and jalapeños. Add some red with diced tomatoes and bell peppers. And make sure to throw in some healthy fats with about 1/4 of an avocado per serving!
You can choose whatever your fav grain is to add to this taco bowl, but I love using the typical brown rice! It’s just the right texture for the rest of the ingredients and really brings the whole thing together.
The best thing to add to these taco bowls is a little tahini dressing (just tahini sauce mixed with water and a little lime juice to thin it out) and a sprinkle of NOOCH!! Nooch is short for nutritional yeast which is a nutty/cheesy seasoning loved by all vegans across the galaxy 😉

Lentil Taco Bowls
- 1/2 cup (dry) Brown Rice, cooked
- 1/2 cup (dry) Green Lentils, cooked
- Romaine Lettuce, chopped
- Red Bell Peppers, chopped
- Yellow Onions, chopped
- Green Onions, chopped
- Avocado slices
- Jalapeños, chopped (optional)
- Tahini Dressing* (optional)
- Nutritional Yeast (optional)
Start to cook the brown rice and lentils since they will take longer. See the eBook for the secret to cooking lentils.
While the brown rice and lentils are cooking, wash and prepare the veggies.
Fill your bowl with however much of everything you would like! Enjoy with some nutritional yeast and tahini dressing!
*Tahini Dressing: just mix tahini sauce with water and a little lime juice to thin it out.
