Just look at ’em! Cheesey and nutritious! Yup, that cheese is vegan! It’s made with cashews and some other amazing ingredients. These sheet pan nachos are the perfect happy hour appetizer when you host some non-vegan friends of yours! Get ready to be very VERY impressed 🙂

For this recipe, the sky’s the limit! There are a few base ingredients you’ll need and then you’ll add all the toppings you desire! Make sure you have organic corn chips, cooked lentils, black beans, and Blender Nacho Cashew Cheese from the Freebie Library!

Here is a list of extra ingredients you can also add:

  • Chopped Onions
  • Fresh Cherry Tomatoes
  • Chopped Peppers
  • Jalepeños
  • Green Onions
  • Organic Corn (off the cob)
  • Fresh Cilantro
  • Plain Cashew Yogurt (I got mine from Whole Foods)

First, make sure the lentils (and beans) are cooked and you have the Blender Nacho Cashew Cheese ready to go! Find the full recipe in the Freebie Library. Make sure all your toppings are chopped/sliced/organized so that it’s super easy to throw together and bake!

Pre-heat your oven to 350ºƒ and get out an edged sheet pan. Start with a layer of organic corn tortilla chips, making sure they are fully covering the bottom of the pan (overlapping is okay).

Then add the black beans, lentils and any other veggie toppings you desire. Then finally top with the Blender Nacho Cashew Cheese and some plain cashew yogurt (this is optional and tastes like greek yogurt/sour cream!!)

Finally, bake the nachos in the pre-heated oven for about 15 minutes until the cheese is bubbly and the veggies are wilted and hot! Enjoy right away with your fav salsa and maybe some margaritas! 🙂

Ingredients

  • Organic Corn Tortilla Chips
  • Black Beans (canned is okay - drained and rinsed)
  • Cooked Lentils (red or green)
  • Blender Nacho Cashew Cheese
  • Tomatoes
  • Onions
  • Bell Peppers
  • Jalapeños
  • Green Onions
  • Organic Corn (off the cob)
  • Fresh Cilantro
  • Plain Cashew Yogurt

Instructions
