One Blender Cashew Dip 2 Ways

If you’re looking for something refreshing and delicious for your next get-together, than these two cashew dip recipes are perfect! They are super easy to make (no soaking required) and are such a healthy alternative to using sour cream dips or ranch dips!

Behind Your Dip Choices

They are dairy free, but they also contain a much more healthy fat compound than those fatty dairy dips. Here’s a peek into what you’re eating when you consume those sour cream dips.

Sour Cream Dips Contain:

  • dairy from cow’s milk
  • saturated fats
  • high amounts of cholesterol
  • 2 grams protein per 100 grams
  • proven to clog arteries and promote heart disease

These Cashew Dips Contain:

  • no dairy
  • monounsaturated fat (“good fat” that helps lower cholesterol)
  • no cholesterol (and helps lower it)
  • 18 grams protein per 100 grams
  • cashews (as well as other nuts and plant based foods) help fight heart disease and reverse the damage done in your arteries

What blender is the best for the job?

The following two recipes were both made with a high speed blender, which is recommended for best results. If you have a food processor, Ninja, or any other type of blender, this dip might turn out a little less creamy and have more texture to it. It will still be super tasty though!

If you don’t have a high speed blender like a Blendtec or a Vitamix yet, I definitely recommend getting one. They are the perfect addition to a healthy kitchen and can really “amp up” your recipes!

I have used both the Vitamix and the Blendtec before and they both work amazingly. I settled on buying my own Blendtec just a few months ago; I love it and would never go back!

Cashew Dip 2 Ways

  • Yield: 2 different dips

Ingredients

  • 4 cups of raw cashews
  • 1/2 cup roma tomatoes, chopped
  • 1 small handful fresh basil
  • 1/2 cup cucumber, chopped
  • 1/2 lemon, skin removed
  • salt to taste
  • water

Instructions

  1. follow the instructions listed below for each dip variation.

Notes

This will keep in the fridge for up to 5 days in a sealed glass container. Separation may happen and is totally natural, just stir before serving again.

Tomato Basil Cashew Dip

What you’ll need:

  1. 2 cups cashews (best deal on Amazon)
  2. 1/2 cup chopped roma tomatoes (roma tomatoes contains the least amount of water)
  3. small handful of fresh basil leaves
  4. water
  5. salt to taste

Method:

  1. place the cashews into your blender and add just enough water to barely cover the cashews. blend until smooth.
  2. add the tomatoes, basil and salt. blend until smooth.
  3. serve with with crackers or on toast!

Cucumber Lemon Cashew Dip

What you’ll need:

  1. 2 cups cashews (best deal on Amazon)
  2. 1/2 cup chopped cucumbers
  3. 1/2 lemon, skin removed
  4. water
  5. salt to taste

Method:

  1. place the cashews into your blender and add just enough water to barely cover the cashews. blend until smooth.
  2. add the cucumbers, lemon and salt. blend until smooth.
  3. serve with with crackers or on toast!
