I’ve been loving these one pan dinners or sheet pan dinners lately! They are so easy to make and even easier to clean up. I want to start posting more vegan one pan dinners to share in the recipe section for you!
One Pan Broccoli Tempeh Dinner
This is an awesome idea for meal prep to get some easy lunches ready for work or to have you dinner already made for you in the fridge. Sometimes when I know I’m going to be super busy, I prep for the whole week, but usually I just prep for the next day. I love make extras for dinner for lunch the dext day. It’s so easy and that way I can have my food a little fresher.
The best thing about eating a plant based diet, it that you don’t have to try very hard to make a meal go a long ways. Just add more veggies or grains! Adding cooked rice will definitely make this dinner go farther. It will also add extra protein and fiber to keep you full and more carbs for added energy.

What is Tempeh?
If you’re new to the plant based world, tempeh might be foreign to you. Tempeh is a form of soy. It’s very similar to tofu but just processed differently. In tempeh, you are still see the whole soybeans which gives is a higher nutritional value and protein content. Tempeh is very band and will take whatever flavor you season or marinade it with! In this recipe you can bake the sauce right on the tempeh along with the broccoli, or you can take more time to marinade the tempeh overnight in the sauce!

Homemade Garlic Marinade Sauce
All you need for this sauce or glaze is balsamic vinegar, tahini, water and minced garlic. Tahini sauce is founded in the asian section of the grocery store and is ground sesame seeds turned into a seed butter. Start with one part tahini and one part water to thin out the tahini sauce. Then add the balsamic vinegar and minced garlic for extra flavor! That’s all! It’s ready to add to the broccoli and tempeh!

Broccoli & Tempeh Dinner
- 2 heads of broccoli, chopped
- 1 package of tempeh, cubed
- 2 Tbsps minced garlic
- 1/4 Cup balsamic vinegar
- 1/3 Cup Tahini
- 1/3 Cup water
- salt & pepper (optional)
- cooked rice (optional)
Preheat the oven to 400ºƒ. Prepare the broccoli & tempeh. Place the broccoli and tempeh on a sheet pan.
Mix the garlic sauce: add the remaining ingredients to a small bowl and mix until combined. Add more or water or tahini until desired consistency.
Pour the sauce over the broccoli and tempeh and gently spread the sauce around evenly. Add salt and pepper if desired.
Place the sheet pan in the oven and bake for about 35 minutes or until the broccoli starts to brown and look crispy.
Serve warm alone, or with cooked rice.
When you serve with cooked rice, it will make the dish go a lot farther and also makes a great leftover meal for lunch the next day!
