Tofu Vegetable Fried Rice

So it’s Tuesday and maybe you haven’t done any meal preps yet because you know that Thanksgiving is coming up and things are gonna start getting a little stressful around here.

Get up and make this tofu fried rice recipe for the rest of the week and get yourself back on track! Super healthy and packed with veggies, this simple fried rice recipe is perfect for a week of healthy prepped lunches, or an easy large meal to share with the family! Enjoy!

Tofu Vegetable Fried Rice

  • Yield: 4-6 servings
  • Prep Time: 10 minutes
  • Cook Time: 10 minutes

Ingredients

  • 4 Cups cooked brown rice
  • 1 Cup vegetable broth
  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • 3 garlic cloves, minced
  • 1 Tablespoon fresh ginger, grated (from piece about the size of your thumb)
  • 2 Cups frozen peas & carrots
  • 1 Cup frozen corn
  • 1 package extra-firm organic tofu, pressed
  • dash ground cumin
  • dash chili powder
  • dash soy sauce (or tamari sauce for GF)
  • salt & pepper to taste

Instructions

  1. Cook rice ahead of time to make sure it is cooled for frying.

  2. Chop onion and bell pepper. Mince Garlic. Grate ginger. Set aside.

  3. Use a Wok (or large pan) on the stove and get it really hot. Sauté onions and bell pepper with a splash of vegetable broth for about 3 minutes.

  4. Add garlic and ginger, and another splash of vegetable broth. Sauté for about 2 minutes.

  5. Add frozen corn, peas, and carrots; along with another splash of vegetable broth is needed. Sauté for 3 more minutes.

  6. Add pressed tofu (pressed just means that you slightly squeezed out the water from the package). Crumble with spatula/spoon until the tofu looks kind of like scrambled eggs.

  7. Add the cooked (and cooled) brown rice, spices, and soy sauce. Mix well.

  8. Press fried rice evenly against the side of the Wok and let it "fry" for 1-2 minutes. Mix and repeat a few more times until satisfied! Feel free to add some more vegetable broth during this time if needed.
