Welcome to another what I ate Wednesday post! Every Wednesday I try my best to post about what I ate as a busy vegan, to show others that eating a plant based diet is not only easy, but also delicious and nutritious!

First of all, I want to start the day with what I am grateful for!

I am so grateful for my family and friends who have been so supportive with this new online thing I’ve been pursuing, especially Tony, my husband! What I Ate Wednesday & Banana Pancakes (Video)

Pre Workout Shot 6:00 am

Before my workouts I’ve been mixing my Vega Pre-Workout Energizer with just 4 oz of water so it’s more like a shot! Super easier to drink and then I can sip on the Vega Hydrator throughout my workout! YUM!! Sometimes I add 1 oz of ACV for a little metabolism booster!

Post Workout Shake 7:30 am

After my workout today I shook up a serving of Vega Sport Protein (chocolate flavor) and drank that down super quickly! I also snacked on a banana while drinking my shake 🙂

Vegan Banana Pancakes

Breakfast 10:30 am: Banana Pancakes

That protein shake really filled me up for a while! But for my real breakfast I made some super yummy banana pancakes! I used 1 scoop Vega Protein & Greens (vanilla flavor) for some added protein, and you really have to make sure that your bananas are nice and speckled like this! They turned out amazing and the full recipe will be in the youtube video (and also in the ebook coming out soon)!

What I Ate Vegan Salad

Lunch 2:15 pm: Small Salad w/ Homemade Dressing

Those pancakes really kept me full for a long time (I was also drinking a lot of water – about 40 oz) so for lunch I just had a small salad with some pumpkin seeds, toasted granola, blueberries and some homemade dressing! I talk about all my dressing-making secrets in my eBook (coming June 1st!!) So keep an eye out for that 🙂 🙂 🙂

What I Ate Vegan Taco Bowls

Dinner 7:00 pm: Pineapple Taco Bowls

We are heading out on a vacation soon, so we are trying to use up all the stuff in our fridge rather than buying new food. So we had all the ingredients for this pineapple salsa recipe from last week! We were out of corn tortillas so we just did some taco bowls with rice, tofu, pineapple salsa & greens! It was so yum!! We ended the night with some extra chips and pineapple salsa!
