First of all I want to be super real with you all and share what’s going on in my life.
If you are only here for the recipes and food posts, skip this part. Yesterday (when I do my recording for this video portion of this post and write everything up) I was hit by a ton of bricks. This is something that some people would consider petty or shallow, but I have been very lucky in my life to call this one of my hardest times.
I had my engagement ring, and two wedding bands which are soldered together, stollen from my locker at the gym. It was gone and I had no idea what to do. I was running all over the place trying to figure out what to do while trying my best to contain my anxiety/panic attacks from taking over.
Today (Wednesday), I went to the gym just like any other day and when I was just about to leave, I got a phone call that someone had turned in my ring at the gym desk!! I literally couldn’t believe my ear so I threw all my stuff in my bag, towel dried my hair and booked it out to get my baby. There are so many memories associated with that ring and I couldn’t imagine what I would’ve done if it was gone forever.

6:00 Pre-Workout & ACV Shot
So I have been taking my pre-workout in just a few oz of water lately rather than a full cup. This way I can just chug and go! Today, I added my shot of ACV to the mix and that really got my body working! If you have a natural tasting pre-workout, I def recommend trying this!
What I use for Pre-Workout: Vega Sport Pre-Workout Energizer
The ACV I always buy: Bragg’s Apple Cider Vinegar
7:45 Post-Workout Shake
1 scoop Vega Sport (chocolate flavor) + 1 ripe banana + ice + water! Blend and enjoy! This is the perfect shake to get me through my morning and feed my muscles after my workout.

9:45 Breakfast: Tofu Scramble w/ Spinach & Mushrooms
Check the video to see how I whipped this up! All I used was mushrooms, spinach, tofu and seasonings! The key is to use some good turmeric to give it the savory flavor and yellow color. Then add in anything else you like!

1:00 Lunch: Hummus & Spinach Wraps w/ Pineapple Salsa
Lunch was super rushed and I tried my best to make it enjoyable and slightly nutritious. Sometimes I eat processed flour tortillas and I’m okay with it! It’s not something I eat every day, but today I ate 2 of them. I stuffed them with hummus, tons of spinach and some yummy pineapple salsa!

3:00 Snack: Raw Jackfruit
So I bought a jackfruit! It was huge and really expensive but actually worth it! The fresh fruit was so yummy (it tasted like bubble gum) and I also made tacos and bbq sandwiches with some of it too! I would love to share my jackfruit recipes soon!
6:30 Dinner: Small Salad & 1/2 of a Vegan Burger (dinner out)
After all the craziness with my ring, I ended up bumping into my dad when I was running around trying to figure things out! I joined him for some much needed happy hour and the best vegan burger! If you live in the Minneapolis area, you MUST head over to the Yard House at the West End and try their Vegan Burger! They somehow use Gardin’s chicken stuff and add in quinoa and kale and OMG it’s amaze-balls!
