I love all the squash I’m seeing out at the grocery stores! It inspired me to make this delicious butternut squash chili, not from scratch, but all organic and natural ingredients.
When it’s squash season, I swear we go through about 3 of them per week in my house (apartment) between just two people. We are squash-o-holics! I love stuffing them, adding them to soups, or just throwing them in the microwave all chopped up and eating them plain!
Since I am so obsessed with butternut squash right now, I had to add it to the regular chili recipe I usually use. This is the easiest chili to make and only requires about 5 minutes of chopping, 8 minutes of microwaving, and 5-7 more minutes of heating! Easy-Peasy!
Organic Butternut Squash Chili
First thing’s first: GRAB YO CANNED CHILI! Yeah, that’s right I said canned!
Amy’s Kitchen is thee bess, and their chili is also amazing! I always keep the original recipe on hand, and the black bean recipe. I love that I can just get them shipped right to my door through Amazon Prime! And they can be ready in minutes on those super busy weekday nights.
Not to add to your Prime addiction, but I do want to throw out that they have groceries now. Yeah! You can get nearly everything you need for your pantry via Prime Pantry! I know that I’m addicted and it’s such a lifesaver!
I’m pretty excited about the new Amazon Fresh as well! It’s not in my area yet, but I would love to try it when it hits the Minneapolis area! Still not sure if it’s for me since sometimes I’m kind of picky about what my fruits and veggies look like 🙂 But I will keep an open mind!
So you have your chili ready, from your new chili stash thanks to the friendly mail delivery person. You’ll also need about 1/2 of a butternut squash diced into about half inch cubes, and 1/2 of a red onion chopped.

The squash and the onion will go into a large microwave safe dish with a splash of water. all you need to do microwave them until they are soft, which for me was about 8 minutes.
While those are cooking, take this time to clean the kitchen, wash some dishes, or unload the dishwasher! There’s no other crazy prep for this recipe, that’s a promise!
When the squash and onions are almost done, start getting the rest of the chili ready. Grab a medium/large pot and add the contents of the two cans of chili. Then dump in your fav spices (in this recipe I add more chili powder, garlic powder, and a touch of cayenne pepper).
Make sure the squash is soft before adding it to the chili. You’ll know if it cuts like butter! Then add it in along with the onions. Bring the heat to a medium/low and make sure everything is mixed well!
That’s all! I hope you love this one as much as we did! When I say we I mean my hubby and me (and he’s not even vegan)!
Organic Butternut Squash Chili
- 1/2 butternut squash, peeled and cubed
- 1 can of Amy's Original Chili (vegan)
- 1 can of Amy's Black Bean Chili (vegan)
- 1/2 medium red onion, chopped
- 3 Tbsp chili powder
- 1/2 Tbsp garlic powder
- 1/2 tsp cayenne pepper (optional)
- salt & pepper to taste
Peel and cube the butternut squash. Cut cubes about 1/2 thick. Chop the onion.
In a large microwave safe dish, add the cubed butternut squash and chopped onion with a splash of water. Microwave for about 8 minutes or until soft.
Add in the two cans of Amy's Chili and all spices and mix well.
Add the butternut squash when it is finished cooking. Let the chili simmer for a few minutes to let the flavors combine! Do not overcook.
Serve in a hefty bowl topped with nutritional yeast if desired!
