My diet currently consists of everything besides animal products, and I always stick to healthy and mostly plant-based. But let’s be real, I eat Oreos, potato chips, and I allow restaurants to fry up my foods in oil every once in awhile!

It’s all about balance. Even though I know I’m not going to feel the best after eating those foods, they are delicious tasting and in the moment, it was worth it. In the end, I always come back to wholesome plant-based foods to feel my best, and perform my best in the gym.

Life happens and I believe in living it! No one is perfect, so don’t hate yourself or others for eating unhealthy foods. Okay, I’m getting off topic, and that’s a rant for another day..

Essential Power Bowl w/ Tahini Lime Drizzle

There are only 5 ingredients in this whole meal! It’s super easy to make, healthy for your alkaline body, and super satisfying. Roasted sweet potatoes, black beans and kale for the essential nutrients plus tahini and lime juice for the savory sauce!

When roasting sweet potatoes, or any other potato, it’s best to throw it in the microwave for a couple minutes first. This is a secret I’ve been using now for a while and it has cut the roasting time in half!

You’ll want to poke a few holes in the potato first to make sure it doesn’t explode! then just use a microwave safe bowl or plate and throw it in there for  about 2 minutes. This won’t cook it all the way, but it will make it super easy to slice into coins for roasting.

Steam the kale in a pan with just a little bit of water until it’s really bright green in color and seems soft. Add some salt and pepper if desired!

Drain and rinse the black beans (if you’re using a can) and measure out 1/2 Cup for your dish, or each dish if you are meal prepping. Use a roasted whole sweet potato (about 1-1 1/2 Cups) for one portion, and a large Cup of steamed kale!

Time for the Tahin Lime Drizzle! It’s super easy.

  1. measure 1/4 Cup of tahini into a small bowl
  2. add the juice of 1/2 lime
  3. stir well until combined
  4. add more lime juice if needed
  5. add water to thin the sauce to your liking

Drizzle the sauce over each portion evenly (makes about 4-5 servings) or save the leftovers in a sealed container for up to 1 week in the fridge.

This recipe is for one portion. If you like to prep your meals for the week like I do, just times each ingredient by the number of meals you want to make.

  • Yield: 1 meal
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes


  • 1 medium sweet potato (orange yam)
  • 2 Cups greens, washed and de-stemmed
  • 1/2 Cup black beans, drained & rinsed
  • 1 Tbsp tahini lime drizzle (recipe above)
  • salt & pepper to taste


  1. Preheat your oven to 400 degrees. Wash the sweet potato and the kale. Poke a few holes in the potato with a fork and microwave for about 2 minutes.

  2. Slice the potato into bite size peices. Roast the potatoes for 20 minutes or until edges are brown and crispy.

  3. When the potatoes are almost done baking, steam the greens with a splash of water for about 5 minutes or until soft and bright green. If using brussel sprouts, roast with a little balsamic vinegar for at least 20 minutes. Drain and rinse the black beans.

  4. Plate your dish with each of the three cooked ingredients and add about a tablespoon of the Tahini Lime Drizzle. Enjoy!
