I found this super awesome superfood powder that’s a great addition to smoothies, shakes and BARS! I just started making my own superfood protein bars because there is so much random crap found in store bought bars.
I love snacks. Like a lot! I usually eat a pretty big breakfast, lunch and dinner because when you eat a plant based diet, you find that you can actually eat a lot more food without feeling icky or overly full! I still have room for a snack or two throughout the day especially in the afternoon between lunch and dinner.
These superfood protein bars are packed with plant protein and tons of superfoods that will give your body a huge kick of energy in a tiny little package! The first time I made them, they turned out a little dry since I altered the original recipe; I used 1/4 Cup of coconut oil instead of 1 Cup (that’s a lot of oil people)!! I replaced it with almond butter since that naturally has some oils in it.

Superfood Protein Bars
First thing’s first, make sure you have all of the ingredients! Here’s what you’ll need:
- 1/4 Cup Superfood Blend: This is the one I used
- 2 Scoops Plant Based Vanilla Protein Powder: Try Vega Protein or Orgain Protein
- 4 Cups Rolled Oats
- 1 Cup Shredded Coconut (unsweetened)
- 1 Cup Craisins
- 1 Cup Pumpkin Seeds
- 1/4 Cup Chia Seeds
- 1 Cup Agave Nectar
- 2 Cups Almond Butter (just almonds in the ingredients)
- 1/4 Cup Coconut Oil (liquid/melted)
- 2 tsp Vanilla Extract
Mix the dry ingredients together in a very large bowl. Like bigger than you think! THE BIGGEST ONE YOU HAVE! I made the mistake of using a slightly smaller bowl and it was a very difficult mixing process later… oops!
Combine the wet ingredients in a separate bowl. Pour the wet on top of the dry and start mixing! Use a strong spoon or spatula to mix at first, then you’ll probably just want to dig your hand in there and get it all evenly mixed! It’s always more fun this way anyways, right?
Lastly press & slice! Make sure they are pressed very well! This won’t work well unless you have the wet stuff evenly distributed. If you find that the mixture is a little dry, you need more almond butter. Go back to the bowl and add some more! It might be a hassle to do this, but trust me, dry bars are not as yummy!
