Wanna know a secret? Silken tofu makes the perfect scrambled eggs 🙂

I have always been a lover a breakfast foods (yes, I used to eat a lot of eggs before switching to a plant based diet). So, when I found the perfect way to enjoy some delicious vegan scrambled eggs, I had to jump on it!

Silken Tofu Scramble

This recipe is super easy and totally customizable. You can add any veggies or spices your little heart desires! Just make sure you have these 3 staples:

  1. Vegetable Broth
  2. Organic Yellow Mustard
  3. Organic Turmeric Powder

I love to add a little garlic and onion powder to mine along with some crushed black pepper. It’s just the perfect flavor and texture!

Ways to Enjoy:

  • over quinoa and spinach
  • with meatless sausage & toast
  • on toast with fresh tomatoes
  • in a tortilla with veggies
  • over rice and beans
  • and more!

Cook Smarter, Not Harder

The best part about cooking is definitely the eating part; but I also enjoy all the cool gadgets you can add to your kitchen! I love my Mix & Chop Tool from the Pampered Chef, which is originally used for browning meat, and works perfectly for crumbling the tofu right in the pan!

The other must-have items are these Silicone Spatulas. They are perfect because the silicone material won’t melt off or seep into your food. YIKES! Check your kitchen ware to make sure the plastic is not only heat safe, but safe for your health!

Vegan Eggs - Best Tofu Scramble

Silken Tofu Scramble

  • Yield: 2-4 servings
  • Prep Time: 5 minutes
  • Cook Time: 10 minutes


  • 1 package of extra firm silken tofu
  • 2 Tbsp of vegetable broth
  • 2 Tbsp organic yellow mustard
  • 1-2 tsp turmeric powder
  • any other seasonings you like
  • any chopped veggies you like


  1. Start by cooking any veggies you want to add in the pan first with a little vegetable broth.

  2. Add the tofu to a hot pan and scramble with the mix & chop tool until it reaches the consistency you like. Add the Vegetable broth if

  3. After about 2 minutes add the turmeric powder and yellow mustard (and any other spices you like). Use the spatula to combine and let the seasonings soak up the liquids leftover.

  4. When it's hot and all the liquids are gone, serve the scramble however you desire!


If you want to add chopped veggies to your scramble, it's best to cook those with some vegetable broth in the pan first. This way they won't be too hard!

Best enjoyed right after cooking, but will stay fresh for up to 3 days in the fridge.
