Loaded Sandwiches & Pizza

Welcome to another “What I Ate Wednesday!” I’m super excited to share what I ate today; it was all so amazing I can’t handle it!

To start off my day was super awesome and productive! One nanny kid was at school all day and the baby was taking awesome naps! The weather was amazing here (for this time of year at least) and we went on a 2 mile walk around the town, had a picnic snack of fruit at the park and even ordered pizza for dinner!! (I nannied late because of date night)

I was also able to get a quick cardio workout in this morning! My muscles needed a little break from the lifting, so a 30 minute LISS bike was exactly what I needed (LISS is a low intensity workout performed at a steady state).

This morning I was feeling like I needed another immune booster so I had the Bragg’s Apple Cider Vinegar, lemon, and some pure maple syrup. I love my cute tortoise mug!

Post workout I had one scoop of Vega Sport Protein with about 16 oz of water… SO GOOD!

Breakfast: Dragonfruit Smoothie!

  • Bananas
  • Kale
  • Dragonfruit
  • Mango
  • Almond Milk (unsweetened original)
  • Rolled Oats
  • Maca Powder

Lunch: Loaded Tofu Sandwich

So I originally wanted to make two open face sandwiches, but it turned into a crazy loaded sandwich fest real fast… So here you have it! tons of veggies and some fried up tofu! I only use a little cooking spray, instead of olive oil, when I fry my tofu otherwise it gets way too oily.

Yeah it was going pretty well and then I just wen savage on that sandwich… #noragrets

Snacks: FRUIT!!

I took my nanny kiddo to the park today while the other one was at preschool and we had a little picnic snack! (I am so obsessed with this kid! He is so dang cute!!!)

Later I was craving something sweet and salty! I already had avocado on my sandwich so I went with peanut powder (no added oils!!), for less fat, and cinnamon on apple slices! I added a dash of water and microwaved it for about 1 minute! It was so perfectly perfect!


 Dinner: Pizza!!

On nights that I stay late at the nanny house I love ordering pizza! It’s delicious with no prep and easy clean up. “But pizza delivered?! That can’t be vegan!” WRONG! Make a custom order (most places will do it online) with no cheese or garlic buttery stuff and add all the veggies you want!


I ordered from Toppers pizza and added: tomatoes, roasted tomatoes, onions, pineapple, garlic, mushrooms, green bell peppers, and spinach! I added extra onions and spinach when it showed up because I like my pizza to be overloaded with those veggies! YUMMERS!!!!
