Today for What I Ate Wednesday I am vlogging my food! I haven’t done a vlog for a while and was really wanted to do another one so check it out! You’ll get to see some nanny shenanigans as well 😉
What I think about Macros
First off I want to talk about counting your macros… I think that it’s very important to be aware of what you are consuming and making sure to get a variety of foods and nutrients. It’s good to know how many calories your body needs along with how many proteins and fats your body needs (the carbs will just fall into place).
It’s your job to know your own body. I really recommend contacting a nutritionist rather than using my fitness pal or bodybuilding.com (because those companies are funded by the food industry and have skewed results to try to get you to eat more protein).
Carbs are your friend! They are the easiest of all 3 macronutrients to break down into energy. when you learn the correct amount of nutrients that your body actually needs, you’ll learn that more carbs are actually better for your energy levels and your weight loss. When building muscle you can increase your protein intake, but only to what you need. Otherwise it’s pretty hard on your body to try to break down all that protein. Keep your fats low, they will come easily when eating a variety of foods like nuts and avocados!
Upon Waking: ACV Kick Start + 24 oz room temp lemon water
I’ve been doing this new thing with my ACV shots in the morning: adding some Emergen-C with vitamin D. It’s perfect for Minnesota winters when we are really lacking in vitamin D around here, plus the fizz from the powder breaks down the acidity of the apple cider vinegar making it much easier to choke down. Trust me on this, it works wonders!
Best ACV to use is Bragg’s Organic Apple Cider Vinegar with the ‘mother’

I fueled up ,y workout with some BCAAs and Vega Greens: Matcha Honeydew Flavor.
Morning workouts are ideal if you want to burn more calories throughout your day. There’s thing thing called EPOC or excess post-exercise oxygen consumption. It’s when your body needs to work harder to restore its oxygen levels. During this time you will keep burning calories and will continue to burn more calories throughout your day!
Breakfast/Post Workout: Sweet Berry Protein Smoothie
I’ve been loving blueberry + strawberry + pineapple + banana smoothies these days! And it’s perfect with a scoop of Vanilla Protein & Greens by Vega. Perfectly creamy and packed with added nutrition.
- 2 ripe bananas
- 1 cup frozen blueberries
- 1 cup frozen strawberries
- 1/2 cup frozen pineapple
- 1 scoop Vanilla Protein & Greens
Fun Fact: Did you know that frozen berries are better than fresh? Frozen berries are frozen at their peak of freshness which preserves the nutrients more than just keeping them cold!
Lunch: Cashew-Kale Pesto Pasta Salad
The kids were requesting the pesto pasta lunch I made for myself from the previous day so I made enough for all of us today! It was the perfect “lunchbox” lunch with no heating required! I don’t have the pesto perfected yet, but I will post the full recipe soon! The link will be here when it’s up and ready to read.
Here is the pasta we used: GoGo Quinoa – found online or at costco!
Snack: Apples & Almond Butter
Elsa (the 5 year old princess I nanny) and I always have a snack (Almond butter from Kirkland’s brand is pretty bomb!) and watch Family Fizz together in the afternoon. It’s like her treat for cleaning up her toys after playtime 🙂 We love that family and their daily vlogs are just adorable! Check them out! Family Fizz
Dinner: Tempeh Peace Bowl
Here’s the full recipe for the Tempeh Peace Bowl! I was able to prep some extra servings of this meal for easy dinners and this was just perfect warmed up in the microwave! 🙂
Dessert: Some Vegan Chocolate…
Omg it was so good! I found this stuff at Trader Joe’s in the checkout line and I just couldn’t pass it up. It came in a 3 pack, which is good because I could’ve eaten the whole bar in one sitting (I ate half)… No shame 😉 It’s all about balance!!
